Behind the Wine: From Orchard to Bottle
Like all the fruit grown at Shannonvale, our mangoes are farmed without chemical fertilisers, herbicides, or insecticides. Generations of careful land stewardship ensure fruit of exceptional quality – fruit that practically sings in the glass.
Once harvested, the mangoes are fermented with natural yeasts in stainless steel (never oak), a method that preserves the brightness of the fruit. Mangoes are rich in natural sugars and aromas, which makes them both exciting and challenging to work with. Our winemakers monitor every step, balancing acidity and guiding the flavours so the final wine is refined and dry, never heavy.
The result is a pale straw-coloured wine with an unmistakable mango aroma, lively freshness, and a sophisticated finish.
