LIME

 Aromatic, vibrant and Tangy

Limes are one of life’s little pleasures! Tahitian limes are a hybrid of the Mexican lime and lemons. Tahitian limes remain green and are fully ripe when the peel becomes a lighter green and a smooth surface. Unripe fruit are dark green with a course peel. Overripe fruit are yellow and lose flavour.

Limes were originally grown in Persia and in Arabia. The word lime comes from the Persian word “limu” or lemon. They were first grown commercially in Babylonia, in an area that is now Iraq. The fruit and even the leaves are used extensively in cooking and in making drinks. The fruits keep well, even better than lemons, and were a staple for the British navy. In fact, they were such a staple for the navy, that for a time they were considered a military secret since scurvy was a debilitating disease that could easily strike down a whole crew when they were far from land.

Sun drenched Tahitian limes are grown on our own property and are picked and squeezed when they are at their juiciest. This gives us a juice that is authentically aromatic with the vibrant flavour and tartness of an intense lime juice. When making our wine, we decide whether to use the whole fruit or only the juice, peel or zest. Each season is different.

Our Lime wine has a pale gold/ light yellow colour. The aroma is a bright, refreshing green lime with grapefruit overtones. The medium body palate is noticeably citrus with fragrant lime, grapefruit and lemon characters. There is a pleasant soft tang of acid that is balanced by a subdued sweetness that results in a very pleasant, refreshing finish. It is truly Sublime!

This Lime wine pairs wonderfully well with Mexican dishes, foods with chillies, as well as most fish preparations.
