A New Language of Wine

In the world of wine, the word “fortified” often conjures images of heavy sherries and syrupy ports. But at Shannonvale, we speak a different language—one that begins in the rainforest, not the vineyard.

Our fortified tropical wines are made from fruits like black sapote, lychee, kaffir lime, and chocolate-infused fermentations. They’re layered, balanced, and surprising. Yes, they’re sweet—but not sticky. Rich—but never cloying. Each one tells a different story.

Spotlight: Black Sapote Fortified

Black Sapote is often described as the “chocolate pudding fruit,” and the wine it produces lives up to the name—and then some. Our fortified version captures its velvety body and adds depth through aging and precise fermentation.

The result? A wine that opens with dark chocolate, fig, and spice, and finishes with a whisper of vanilla and Christmas pudding. It’s our most complex wine, and often a customer favourite.

It’s also personal for Laza, one of our winemakers:

Lychee & Kaffir Lime – Fortified but Fresh

Not all fortifieds are deep and brooding. Our Lychee Fortified Wine is delicate, aromatic, and gently sweet—think floral top notes with a silky body. It’s often the sleeper hit of our tastings, especially served slightly chilled.

On the other end of the spectrum is our Kaffir Lime Fortified—bold, zesty, and electric. A favourite among cocktail makers and summer sippers, it offers a punchy citrus finish and a refreshingly herbal edge.
